Down with the government! Anarchy on the Internet! I just found out that the U.S. CONTROLS the french fry market, and I'm most displeased. Okay, so I've had far too much coffee today (not mention too much to drink last night) and I'm a little extreme. But there really are USDA regulations on frying temperatures, colors, and even the variety of spud you can use to make those crispy little critters. The Official French Fries Page (http://www.<stolen_domain>.com/fries/) told me, and I believe them. But the wonders don't cease there... On this Web site, you can learn the history of the venerable french fry, discover 22 things to do with french fries besides eat them, and yes, actually read the U.S. government codes on french frying. To improve this site, I'd recommend a home fries spin-off (some of you know my predilection for home fries, no ketchup, heavy paprika), but it's a beautiful idea nonetheless.

Sorry, Ellen, you predilection for them notwithstanding, home fries are not French Fries, not even in France. And to make things worse, you never even told us you were writing this article. Thanks anyway, though. We appreciate it.
